Oh my gosh. I used blackberries I bought at a farmers' market this weekend instead of raspberries and didn't add the lime zest. Also used vanilla soy milk. These are SO GOOD!!
I have made these twice in the last week! So delicious and light. I decided the second time to mix some powdered sugar with soy milk and lime juice for drizzle over the top.
I made these today and used an asian pear and the muffins came out good. Very moist, one of my first times baking without eggs! I'll have to try them with a banana next time.
