Veggie Sausage and Guacamole Mayo Pita Pocket

What you need: 

1 round whole-wheat pita bread, cut in two and opened to form two pockets
1 small avocado
3 tablespoons vegan mayonnaise
pinch chili powder
2 vegetarian sausages, cooked and sliced horizontally
6 thin tomato slices
chopped spinach

What you do: 

In a small bowl or on a chopping board, mash together avocado and mayo. Season with chili powder and salt and pepper.
Spread avocado mayo inside each pocket.
Place three tomato slices in each pocket, as well as sausage slices and chopped spinach.

SO HOW'D IT GO?

I had some veggie sausage to use up and I *thought* that avocado would be fine with it, but I found the combination of the flavours to be overwhelmingly unsatisfying for me. I really don't recommend the vegan sausage/avocado combo to anyone (sorry). Without the avocado, would have been a really good wrap.
