Melty Cheese

What you need: 

2 cups nondairy milk, divided (I use soy)
4 ounces pimentos
1 1/2 teaspoons salt
1/2 teaspoon onion powder
3-4 tablespoons nutritional yeast flakes
1/4 teaspoon garlic powder
2 tablespoons cornstarch
1/4 cup raw cashews
1 tablespoon lemon juice

What you do: 

1. Blend cashews and pimentos in small amount of milk until smooth, add remaining ingredients (including milk), and blend to mix.
2. Cook in heavy sauce pan until thick, stirring constantly.

SO HOW'D IT GO?

17 yr old omni son's response to this recipe:  "are you sure there is no cheese in it?"  I made 1/2 batch because I was only cooking for 3 tonight.  There are no left overs.  We used it on burritos and nachos.  It took it a little while longer than I expected to thicken and could have been a tad thicker but that may have been because I did not drain the tomatoes well enough.

omg i love this stuff... what "milk" did you use? i have a nacho recipe on this site! nobody hates my noochy nachos :)

the recipe doesn't call for tomatoes though, so you added them?

This recipe is really versatile. My fiancee and I have used it both in the cheesy potatoes casserole (YUM!) and for macaroni and cheese. It had a little more bite than I liked in the macaroni, but my fiancee loved it!

I only have rice milk, so I used that instead.  It tasted like it was missing something, so I put in some earth balance, and it was much better.

Sea_of_Green, I found jarred pimentos at my local grocery store in the aisle with the pickles.  Might be able to find them fresh if the grocery stores ever carry them.

didn't like this the first time i made it.  I submit that if you have had trouble getting this recipe to be anything but awesome, one question for you.

Did you use unsweetened soymilk?

I didn't the 1st time, and...it was kinda ew.

Second time with unsweetened soymilk it was  :)>>>

Where can I find pimientos? And are they only available jarred/canned?

so I wasn't really impressed with this, which is really disappointing because I really wanted to find a cheezy sauce I actually like....
I followed the recipe exactly - my only change was that I used arrowroot powder instead of cornstarch....but it never really thickened up, and it was pretty bland.
I added salsa to it today to eat with some chips, and that helped, but I really wanted a sauce to go nicely with my broccoli over a baked potato - and it wasn't what I was hoping for....so the quest continues....

This was really yummy! I made it a few days ago and forgot to comment on it. Instead of soy, I used almond milk and tapioca starch instead of corn starch. I think next time I'll use arrowroot. I poured it over wild rice pasta and it was very satisfying.
The end result looked a lot like the colour of cheez whiz, (in sauce form, not a spread). It tastes much better than that though!
