Mock Hollandaise Sauce
What you need:
1/2 stick margarine (Willow Run is good)
1 8-oz tub vegan sour cream
1 teaspoon paprika
1/2 teaspoon nutmeg
1 tablespoon lemon juice
What you do:
Melt margarine over medium-low heat in a small sauce pan. Stir in sour cream. Sprinkle in spices and juice. Heat ALMOST to a boil, stirring. Serve!
This is really good served over Tofu Benedict. Heres how:
Layer:
1. whole wheat vegan English muffin2. slice vegan Canadian bacon3. tofu Breakfast Scramble - prepared (a packet mixed with water and added to browned tofu)4. mock Hollandaise sauce

I tried this with artichokes tonight, with a few modifications-I added about 1/2 tsp. of tumerick so that it had some yellowy color, and I added a little extra soy garden (MUCH better tasting than Willow run & no trans fats) and a little extra lemon juice to ballance the oleo.
Our omnivore daughter LOVED it-she ended up eating almost 2 artichokes, every leaf & heart drenched in sauce. Thanks for posting this.
