Fluffy Cranberry-Orange Cookies

What you need: 

1/2 cup maple syrup (substitute for honey)
1/2 cup shortening or margarine
Replacement for 2 eggs
4 teaspoon orange juice
2 teaspoon baking powder
1 cup whole wheat flour, sifted
1 1/2 cups unbleached flour, sifted
1 cup mashed fresh cranberries

What you do: 

1. Preheat oven to 375 degrees Fahrenheit.
2. Mix syrup, shortening, egg replacers, and orange juice thoroughly.
3. Add baking powder, salt, and flour and mix well.
4. Stir in cranberries.
5. Shape dough into small balls.
6. Place on greased cookie sheet and flatten with bottom of a greased glass dipped in natural sugar.
7. Bake 8 to 10 minutes.

SO HOW'D IT GO?

I used honey instead of syrup, and since I didn't have orange juice, I used orange extract (1 tsp), vanilla (1 tsp), and two extra tsp of water.  I also used dried cranberries instead of fresh, and threw in maybe 1/4 cup of sugar based on a suggestion in another review.  I must have made mine a little larger than the poster did, because I only ended up with about 3 dozen.  I ended up baking them for about 15 minutes before they browned a bit (probably because they were bigger/thicker than intended).  I thought they were very good, as did my vegetarian housemate and my omni housemate (who is kind of a picky eater).  Since there was no picture posted, I put up a photo of my version.  Your mileage may vary.  Thanks for the recipe! ;)b

Oh and It doesn't say how much salt to put in so I guessed 1/2 teaspoon...worked fine :)

;)b it is the right time of season for these cookies :) I just happend to have fresh oranges and cranberries on hand so I decided to give them a try. Pretty good I must say, although I might suggest adding a bit of sugar :) other than that delish!
