Chocolate Chip Cookies

What you need: 

2 1/4 cups of unbleached flour
1 cup vegan butter (I use earth balance)
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon vanillla
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup soy milk
12 oz vegan chocolate chips
2 tablespoons ground flax

What you do: 

Cream the butter and sugars together. Slowly mix in the soy milk and vanilla. In another bowl combine flour, baking soda, flax, and salt. Slowly add the dry ingredients to the creamed mixture. Then fold the chocolate chips into the dough. You can use a teaspoon or roll the cookies in to balls. You can make them as big or as small as you'd like.
Bake at 350 degrees Fahrenheit until golden. (8-11 minutes)
