Craving-Cure Cookies

What you need:

1/2 cup brown sugar, packed
1/4 cup dry sweetener of choice
1/3 cup apple sauce
1 teaspoon vanilla extract
3/4 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups quick cooking oats
3/4 cup carob chips (or raisins, or something else you like)

What you do:

1. Preheat oven to 375 degrees F. In a large bowl, mix sugars, apple sauce and vanilla.
2. In another bowl, mix the flour, baking soda, cinnamon, baking powder and salt, then stir into the wet mixture.
3. Add the oats and then the carob chips. Drop rounded teaspoonfuls onto a greased cookie sheet and bake for 8-10 minutes.
Once you add the oats and chips it gets very thick, so you can always add a bit more apple sauce or some water to get it to a better consistency. (I usually don't have to do this). They come out nice and soft! Usually makes about 20-24 cookies depending on how big I make them. Enjoy.

SO HOW'D IT GO?

These turned out really yummy.  I followed the recipe exact, leaving out the chip though because my husband and I are not too fond of chocolate.  The only thing I would suggest is maybe heating the oven to only 350, and leaving the cookies in for about five minutes so the bottoms do not burn. (:

These cookies are delish and sooo easy to make.  I also use all brown sugar, a little more applesauce, add cranberries, raisins and pecans.

OH MY GOODNESS. These are AMAAAZING.

I used all brown sugar, and I think these taste like anything BUT 'health foody'. They are sinfully sweet and yummy. Though I think the difference is that I only put about a cup of oats instead of 1-1/2. They are perfectly chewy and spread nicely (something I had a lot of trouble getting to happen with other vegan cookies)

Thanks for an amazing recipe. They're going upstairs to my house potluck dinner tonight and I'm sure they'll be a hit.

Yummy!  I made these with raisins and they turned out great.  I think next time I will cut down on the sugar a little because they were very sweet (and I have a big sweet tooth so that's saying a lot).

Wow! These were devilishly good  >:D hehe
I used whole rolled oats and added a little extra cinnamon and vanilla... yummmmm!

Can old-fashioned oats be used to substitute quick-cooking oats, and if so, how?

I used the same amount of rolled oats as what the recipe called for Sunburntpixy :) it usually works out perfectly that way in any recipe

Gave these a whirl this week because they looked healthy, filling and yummy.
I have a daily battle with my husband's belly trying to find it enough food so that I don't get a call one afternoon to say that he's eaten a co-worker's arm due to a hungry attack... so simple baking that also provides decent/lasting energy is always a hit at our house.
I don't know whether I technically needed to or not, but I added more apple sauce after the mix thickened up with the oats, and used sultanas instead of chocolate chips.  Baked them for 12 minutes and was still a bit unsure whether they were done .
Verdict: one happy husband :)  Also, my mum tried one and said it tasted like a bite-sized, chewable serving of porridge .

I make these at least once a week to take to work with me as an afternoon snack. They are so good! I don't think I will ever get tired of eating them!!!

I made these yet again today, but used whole wheat pastry flour, old fashioned slow-cooking oats, 3/4 scant cup semi-sweet chocolate chips, 1/4 cup brown sugar and 1/4 cup agave (no liquid adjustments needed).  They were great!  Perfect sweetness - about 100 calories per cookie (19 cookies this time).  No added fat and plenty o' fiber.  Thanks, tino!
