1/2 cup brown sugar, packed
1/4 cup dry sweetener of choice
1/3 cup apple sauce
1 teaspoon vanilla extract
3/4 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups quick cooking oats
3/4 cup carob chips (or raisins, or something else you like)
1. Preheat oven to 375 degrees F. In a large bowl, mix sugars, apple sauce and vanilla.
2. In another bowl, mix the flour, baking soda, cinnamon, baking powder and salt, then stir into the wet mixture.
3. Add the oats and then the carob chips. Drop rounded teaspoonfuls onto a greased cookie sheet and bake for 8-10 minutes.
Once you add the oats and chips it gets very thick, so you can always add a bit more apple sauce or some water to get it to a better consistency. (I usually don't have to do this). They come out nice and soft! Usually makes about 20-24 cookies depending on how big I make them. Enjoy.
