Bulgar-free Tabouli

What you need: 

4 large kale leaves, minced
1/2 bunch parsley, minced
1/4 bunch mint, minced
4-5 green onions, thinly sliced including green parts
1 cucumber, peeled, seeded and finely chopped
4 plum tomatoes, seeded and finely chopped
2 lemons, juiced
2 tablespoons extra virgin olive oil
salt, to taste
1 avocado, finely chopped, optional

What you do: 

1. Combine all ingredients except avocado.
2. Stir and refrigerate 2 hours or until ready to serve.
3. Add avocado right before serving.
Source of recipe: This is a modified version of pretty much any standard tabouli recipe (but not one in particular).
