Spiced Root to Fruit: A Raw Food Salad

What you need: 

1 cup cauliflower florets
1 green onion, thinly sliced
1/2 sweet apple, chopped
1/2 cayenne chili pepper, thinly sliced
2 teaspoons raw stone-ground mustard (my favorite is Eden Foods’ raw stone ground brown mustard)
1 teaspoon raw agave nectar
1/4 teaspoon cinnamon
1/8 teaspoon cumin
salt, to taste
1 cup sweet potato, finely shredded or diced
handful raw cashews, chopped

What you do: 

1. In a bowl, combine green onion, cayenne, apple, and cauliflower; toss to combine.
2. Add prepared mustard, agave, cinnamon, cumin; stir well. Add salt; stir.
3. Add shredded sweet potato and cashews; fold into the existing mixture.
4. Serve garnished with a pinch of cayenne, if desired.

SO HOW'D IT GO?

This was sooooo delicious! And easily modifiable, too. Looking forward to the chance to play with the recipe again.

nowheregirl, I'm sure those substitutions would be great! Did you ever try them? I'd be curious what changed, if anything.

This looks AWESOME! Do you think I can substitute the agave with dates? Or date sugar? And if I take the salt out would it change the taste a lot? I definitely want to make this!
