Best Oat Cookies that Ever Existed
What you need:
1 cup brown sugar
1/2 cup white sugar
1/4 cup plus 1 teaspoon oil
3 tablespoons water
1 banana, mashed
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons cinnamon
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups oats
What you do:
1. Preheat oven to 350 degrees F. Mix the vegan sugars, oil, and water. Add the banana and vanilla. Separately, mix flour, baking soda, cinnamon, and salt.
2. Mix flour mixture and wet mixture. Stir in the oats. If it is too thin, let stand a bit so the oats can absorb the excess liquid. If too thick, add more water.
3. Drop them by tablespoon onto cookie sheet, and bake for 13 minutes. To check if they are done, flip one over and it should be browned. Check inside doneness.

SO HOW'D IT GO?
I tried this recipe, and while I thought they were delicious, after they cooled they got really "cakey." Right after they came out of the oven they were crispy like a cookie, but the next day it was just kind of cakey and not exciting. I froze them, and then they were pretty yummy frozen. Has anyone else had issues with this?
Loved this recipe. Nice and Vegan too~! I didn't have baking soda, so I replaced it with baking powder. All in all it turned about great. Just as a side note, make sure you smash the banana well or you will have chunks in your cookies.

great recipe!, the banana is fantastic...i added walnots and raisins, reduced the sugar amount and mixed it with maple syrup...super!
and oh..
also tried the applesauce in stead of oil thing.... but no way! it became a goowie wannabe cookie, not good! the oil is essential in this...

These cookies were really easy and delish.
I also made a batch substituting regular sugar with blackstrap molasses
and added a pinch of nutmeg, like suggested above.

So delicious. I was a little skeptical, but I was craving oatmeal cookies so much. And these hit the spot. I haven't told anyone the first batch is done yet, and I've just been stuffing them in my mouth. So crispy on the outside and moist in the middle. Almost perfect but raisins would make this divine.
I used 1/3 cup applesauce instead of banana, only 1/3 cup brown sugar and 1/3 cup raw sugar and only 2 cups of instant oats. I'll reduce the sugar even more next time, and add raisins! Thanks for the great recipe.
this recipe is already in my 'keeper' list, it was simple, fast, made a ton of cookies, and everyone loved them.
I was a bit skeptical, after only just having enough liquid ingredient to mix the flour etc in to, as to how I was then going to mix in over two cups worth of oats... but somehow, it worked, and I even had to add a little more as the mix ended up really sticky!
Ended up with over 30 deliciously oaty cookies, might play around with adding seeds/fruit/extras next time, but it was super just as the recipe directed. Yum!

These were fantastic. To avoid the overpowering taste of banana, I used 1/4 c of vanilla soy yogurt, they turned out delicious. And I added a lot of raisins. Yum.
YUM! I subbed in a bit of PB and extra mashed banana for the oil, and added some chopped fresh cranberries, but everything else was right on!! Very tasty cookie, and the texture was really nice-- crisp but not dry, held together nicely, and chewy.
