Chocolate Oatmeal Vegan Delights

What you need: 

1 stick soy margarine
2 cups sugar
1/2 cup soy or rice milk
1/3 cup cocoa powder
1 teaspoon salt
1/2 cup peanut butter
3 cups dry oat meal
1 teaspoon vanilla

What you do: 

Mix first 5 ingredients in a large sauce pan. Bring to a boil. Reduce heat to low and add the rest of the ingredients. Mix until till well blended. Remove from heat. Drop batter by teaspoon onto wax paper. Place in refrigerator until completely cool.

:D  LOVE 'EM!!! These are wonderful! Super easy and quick! My non-vegan friends LOVE them as well. I also cut the margarine and sugar in half. I also let the first five ingredients boil for a couple of minutes before I added the rest of the ingredients. Thanks for the recipe!


I followed the previous suggestions of using 1/4 cup less sugar and only a half stick of Earth Balance.  They never did set completely firm but the taste was fanastic!  Just like I remembered no-bake cookies to be so eating the mix with a spoon will be no problem at all.  I like satisfying a chocolate craving without paying $5 plus for a bag of chocolate chips.  This recipe is a keeper.  Thanks!!!   :D     


1/2 cup of the tub margerine is equal to the stick kind.

also, i substituted vegan cream cheese for the PB. one word. yummy.  :o
