Banana Coconut Cookies

What you need: 

2 bananas, mashed
1 teaspoon vanilla extract
1/2 cup sugar
1/2 cup vegetable oil
3 teaspoons nondairy milk (I use soy)
1 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup rolled oats
1 cup shredded coconut

What you do: 

1. Preheat oven to 350 degrees F and lightly oil a cookie sheet. In blender/food processor, blend together mashed bananas, vanilla, sugar, oil, and milk.
2. In large bowl, sift together flour, baking soda, and cinnamon. Stir in the oats and then fold in the banana mixture well.
3. Fold in shredded coconut. Scoop spoon-sized portions onto prepared cookie sheet and bake for 15-20 minutes.

made these on the weekend and took them to share with a group of omnivorous university students.

Seriously.
I really l liked them too, I'm a fan of coconut, and these are just a bit of a twist on the rolled oat/banana cookies I normally make, so I think I'll definitely slip them into the rotation.

I make these all the time for my family. I have a vegan hubby, baby and two toddlers. They all LOVE these cookies. Its the only cookie recipe I use. For home, church pot luck, any occasion. Everyone always loooooves them. I only add dark chocolate chips to the already amazing recipe.

Question: I only have steel cut oats in the house. Can I use them? Id rather make use of what I have on hand today.

Yummy! Like little bites of banana bread! I added some cardamon powder and swapped the oil for apple sauce. They still came out fine - although my first batch cooked really quickly and were are bit brown! Still delicious though.  :owl: (Why the owl? Dunno - just wanted to use it! Owl's eat coconut don't they?)

does anyone know if  i replace the soy milk with coconut milk if it would work the same?  ???

You'd probably be fine...its such a small amount that i doubt it would make much difference.

These cookies were amazing, they were so moist and yummy! I can't remember if I used applesauce instead of oil, but either way they were SO delicious. I made them quick to take to a movie and only baked half of the dough, so the other half ended up sitting in the fridge for a few days, but I just added a touch of water to it and it baked up just as good as the first ones, though maybe not as pretty. I love these as they are sweet enough for my hubby's monster sweet tooth, but not as bad for his diabetes as other cookies. THANK YOU!!  :)>>>

halved the recipe, did half quinoa flakes/rolled oats. added 2 TB flaxmeal, used agave nectar instead of sugar(though a sprinkle of sucanat on top of each cookie) uhm half whole wheat/one quarter all purpose/one quarteroat flour.  coconut flakes were fine and unsweetened (who needs the extra sugar anyways?) and WHAM those puffy texturized things came outta my oven.  yummy with tea or juice or rice milk for breakfast :)

I LOVED these cookies!  :)>>>  I even spreaded a bit of Tofutti's Cream Cheese to the top of each cookie.  SOOOO yummy and it totally destroyed my diet  :D

This recipie is really yummy--I did make a few changes though--I halved the oil and added chocolate chips and walnuts. They baked up really fast--only 15 minutes andthey came out great!
