Banana Coconut Cookies

What you need: 

2 bananas, mashed
1 teaspoon vanilla extract
1/2 cup sugar
1/2 cup vegetable oil
3 teaspoons nondairy milk (I use soy)
1 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup rolled oats
1 cup shredded coconut

What you do: 

1. Preheat oven to 350 degrees F and lightly oil a cookie sheet. In blender/food processor, blend together mashed bananas, vanilla, sugar, oil, and milk.
2. In large bowl, sift together flour, baking soda, and cinnamon. Stir in the oats and then fold in the banana mixture well.
3. Fold in shredded coconut. Scoop spoon-sized portions onto prepared cookie sheet and bake for 15-20 minutes.

I subbed applesauce as usual and used whole wheat flour. These are delicious Sealed

I love this!!! Best cookies I've ever made AND tasted - so moist and puffy. I used almond milk instead of soy milk. Although there was no vegetable oil, and I had completely forgotten about coconut oil in the pantry so I used extra virgin olive oil, which worked!

Oh, and I also used half honey, half brown sugar, and whole wheat flour.

Wow! These are SO yummy. I usually bake non-vegan cookies, but I think these might be the best cookies I've ever baked. So good! I used rice milk instead of soy, used coconut oil instead of veggie oil, didn't have any shredded coconut, so just skipped it and added a pinch of salt. So delicious. Turned out perfectly. Am typing with one hand right now because I can't put this deliciousness down. 15min exactly and bam! Super good.

glad you guys approve! i cant really answer questions on the recipe; donned it from a friend of a friend, so trial and error i guess ;)

Made these tonight and they are already gone! Halved the recipe, and subbed applesauce for half the oil, and just mashed and mixed everything by hand and turned out great. Added chocolate chips to half of them too! Omnivore boyfriend loved them too! Will be making again.

awesome! my family cant get enough! instead of using sugar I put agave maple syrup and for flour i used spelt flour.  I definately dont feel guilty letting my kids eat as many as they want!

Oh my goodness, oh my goodness!  :D
These are quite literally the BEST COOKIES IVE EVER HAD, these are almost buttery, perfectly sweet, a bit cake like and so moist!
I pretty much stuck to the recipe but made a few little substitutions; used half oil and half concentrated pear and apple juice spread, and as this stuff is pretty sweet anyway I cut the sugar way down, I also used less oats as I'm not a huge oat lover in baking unless its pure unadulterated flapjack, mMm.
Anyway! With my minor subsitutions I got 20 cookies, they didn't spread but they sure did puff! The outsides are crispy and the insides are fluffy and soft, I also only needed 10 minutes for these cookies.

does anyone know if  i replace the soy milk with coconut milk if it would work the same?  ???

i use almond or coconut milk and they turn out just fine. its such a minute amount. doesn't make a difference. :)

I make these over and over and over and over and they are yummy and well received each and every time by both vegan and omnivore alike. best go to cookie ever!
