Vinegar Cookies

What you need: 

1 cup sugar
2 sticks margarine (softened)
1 1/2 cup flour
1 teaspoon baking soda
1 tablespoon vinegar
1/4 teaspoon salt

What you do: 

Beat together by spoon the vegan sugar and margarine.
Stir in the rest.
Bake at 350 degrees for 17 minutes on lightly oiled cookie sheet.

i had this in my recipe box for a year or so and i finally decided to make it tonight since i wanted cookies and they seemed simple and fast.  they were one of the quickest cookies to make (i only used one mixing bowl and a measuring cup for the dry ingredients).

i took the advice of angelofdance and i made them into cookie cakes by spreading them on parchment paper and leaving plenty of room for spreading (which they did a lot of!).  i've never made cookie cakes before, but these seem to have turned out well.

i had to bake it into two batches, so i added 1/2 tsp of mint extract and a couple handfulls of chocolate chips to the second half.  i love mint chocolate chip and i was craving it.  it tastes great!  :)>>>

i'm not disappointed in this recipe.  it's good.  i'm glad i had the reviews for the extra advice about the spreading and such.

also, i was almost out of butter, so i used about 3/4 cup butter and 1/4 cup applesauce and i used whole wheat pastry flour.
