Freezing Vcon chickpea cutlets

Hi I made a big batch last night and have some uncooked "dough" left over that I would like to roll into cutlets and freeze.  For those of you who do this, should I freeze them uncooked or cooked?  (I usually bake them.)  Thanks very much!

I've only frozen seitan stuffs cooked. I'm not sure how uncooked would turn out.
