I have been searching but I would love some input... I have english muffins and some yves "canadian bacon" that needs to be used up asap... Please help!

Haven't made it, but there's the tofu benny in Vegan Brunch

There's also the Greek tofu benedict in Vcon.

This one was in an issue of Vegetarian Times a while back, it was good, I didn't use the white wine in the sauce (or the expensive mushrooms,) and it was still good.
