Dinner for dad

My dad is comming in to visit and he is arriving tonight!! :w00t!: :w00t!:
I need to know what to make for him for dinner. He isn't a vegetarian but he is trying to watch his cholesterol. His wife is italian so he is sick of pasta and won't want that for sure. He won't be too hungry, but he will be tired after fighing NYC traffic.
What can I make for him that will make the place smell good, and isn't too much work to make, as I still have my 12mo old son who will need attending. I am thinking something with tofu as my son loves tofu as do I. Maybe some kind of a tofu stirfry? What do you think?
You cant go wrong with stir-fry. My dad is from the meat and potatoes era and even he loves veggie stir fry, I even taught him how to make it. Be sure to have a lot of different veggies (broccoli is my favorite in stir fry), marinade your tofu in soy sauce or something similar, and make a big pot of rice. My favorite stir fry sauce consists of soy sauce, about 3 tablespoons of hoisen sauce, few splashes of sesame seed oil and a tablespoon of cornstarch. The beauty of stir fry is you can put anything in it. Good luck!
