made pesto last night

I harvested 4 cups of basil yesterday and made my old vegan pesto recipe (basil, olive oil, walnuts, salt, lemon juice and a little water).  We are former vegan, vegan-leaning ovo lacto vegetarians.  DD got hooked on store bought pesto during the past year, but as I was making this, I was thrilled to hear her say she likes mine better than the cheesy stuff!

We slathered it on whole wheat toast to celebrate.  ;)b

I made pesto last night too!  It was just ok.  Too bad mine didn't turn out as good as yours.

I made pesto this week as well.  Basil, olive oil, pine nuts, garlic, and a little sea salt.  I'm having some on whole wheat pasta for lunch.

Here are my amounts of everything.  It's my recipe, not copyrighted:

1 c. basil, packed
1/2 c. walnuts (toasted or not)
2 large cloves garlic
4t. + olive oil
2t. (scant) lemon juice
1/2t.(scant) salt
1/8 c.( scant) water

process like crazy.

We love pesto, I use almonds and a little nutr yeast for the cheesy flavor, and freeze it!  works great, stays bright green and is awesome in Jan or Feb for a winter pick me up!

I'll have to try the walnuts.  I've always used pine nuts, but they're so expensive.

Storm, almonds can be good too, I usually use them because I don't have pinenuts.
