How to store open vegan cheese?

Anyone know?

I use it so infrequently it molds long before I come back to finish it off. 

Should I freeze it?  I tried an acidulated water brine.  This slowed down the mold growth, but not enough.

Is it Follow Your Heart? If so, here's what I do. Slice the cheese in half, wrap each half with plastic wrap & put in the freezer. You can actually shred it while it's frozen & if you let it sit on the counter for a few minutes, it shreds even easier. Then I put it back in the freezer.

And it doesn't make texture mealy?

If so, I didn't notice. I always broil it so it melts. I don't use it cold on sandwiches like a cheese sandwich.

Use a ziplock bag.
