Wheat Berry Recipes

I am looking for some wheat berry recipes. Specifically recipe I make as a salad and bring for lunch and can eat cold or at room temp.
I have to admit I am an omnivore ( my husband the carnivore gets nervous when he sees me on this site hee hee hee). I am eating more vegan right now that he is away for over a week. I am always looking for salad recipes that involve whole grain and/or beans. That is my standard for lunch most days.
I make a wheatberry "waldorf" salad (recipe from Native Foods cookbook), using cooked wheatberries (2 c), chopped apples, chopped celery, dried fruit (in the book, she calls for cranberries...I usually use a dried fruit mix I get from Trader Joe's, containing dried strawberries, blueberries and raisins). The dressing is:
1/4 c. vegan "mayonnaise"
1/4 c. lemon juice
1/4 c. maple syrup
1/4 t. salt
It's a simple dish, very lovely to look at, and very delicious. Perfect for summer!

Hi Lezly! I'm hangin' in there. I haven't been cooking much lately. I've had a crappy spring so far...first we lost my oldest dog to kidney failure, and then my father died suddenly, two weeks later. I'm still not over that. So it's been rough. Anyway, we decided we're ready for some changes. Decided to move out closer to the country, so beginning of July we're leaving Chicago behind and moving to Northwest IL.

Thanks, for all the suggestion. I also have some recipes that use rice a base and it would be nice to try them with a different flavor. :D
