Fiesta Corn Salad

What you need: 

3 to 4 ears fresh corn
1 tomato, chopped
1 avocado, chopped
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1/2 cup fresh cilantro
2 tablespoons lemon juice
2 tablespoons olive oil
1 pinch chili powder
1 pinch cumin
1 pinch sea salt

What you do: 

1) Shave the kernels off the corn cob with a sharp knife. Place in a bowl and toss thoroughly with remaining ingredients. Refrigerate until serving.

Spruce it up with extra veggies and spices as desired.
