Feelin' Good Salad

What you need: 

6 leaves romaine lettuce OR any other lettuce you have on hand
Sprouts, as desired (I used micro sprouts)
1/2 to 1 cup cilantro
1/2 avocado
1 organic tomato
2 tablespoons nutritional yeast (I use Braggs)
2 tablespoons raw unfiltered apple cider vinegar (Braggs brand again)
1 teaspoon cayenne pepper OR diced fresh pepper
Pinch Celtic salt
1 teaspoon pepper flakes (optional)
Juice from 1/2 lemon
1 clove garlic, grated
1 teaspoon grated fresh ginger

What you do: 

1. Wash lettuce, cilantro, and sprouts. Place them on a kitchen towel or paper towel to let them dry off.
2. Make the dressing! Blend the avocado, tomato, nutritional yeast, apple cider vinegar, cayenne pepper (or fresh pepper), lemon juice, salt, grated garlic and ginger all together until creamy.
3. Chop lettuce into bite size pieces or leave them whole! If lettuce is chopped, place in a big bowl and pour the creamy dressing on top. Add the vegetables around the sides and the sprouts and cilantro on the side. Sprinkle with a little celtic salt and pepper flakes (optional). Then dig in and soon you will understand why I have named this "Feelin' good salad"!
If you wanted to leave the leaf's whole then add some of the cilantro and sprouts with your vegetables on to the leaf. Pour some of the dressing on top and fold the leaf to look like a burrito. Any enjoy!
Other notes: You can add additional vegetables you have on hand like carrots, broccoli, celery, radishes, bell pepper.... etc.This recipe is awesome because you can change it any way you like. You can dice everything up instead of making it into a creamy dressing and put it on top of the lettuce. You can add ingredients and subtracting ingredients. Just play around with it and see what you come up with and then post it on here!
