Yuba

I have never heard anyone here mention this food. It is soymilk scum to be blunt. However, it is sold dried in sheets that you briefly soak and use for a lot of things. I understand that Buddist monks eat a lot of this, but I have never found it where I live and I have looked. I have an online source for it now, where Brianna Grogan gets hers.
Just wondering if anyone else has used this.
I love yuba! It is so delicious. And yes MDVEGAN it is the skin that is produced in the tofu making process. I don't have any recepies for it but i'll ask my students and boyfriends mum and post them for you. There is another really nice tofu kinda stuff that I eat here but I can't remember what it's called. I'll ask my boyfriend when he gets home and let you know. :)
ok I made a mistake. Yuba is not the skin it's the other stuff I was thinking about. You just eat it as is or you can boil it to heat it if you want. A mixture of soy sauce, mirin and sake (the magic 3 Japanese ingredients as I have come to learn) over the top is good. A bit of chopped green onion, grated ginger and/ sesame seeds are all good on top of any link of tofu I have found.
I'm still on the hunt for the tofu skin stuff and some more ideas on how to eat and serve them. Will ask the mothers tomorrow if I remember.

There was an article in the NY Times magazine about Yuba a couple of months ago. There were a couple of recipes as well. The author--a cook and NOT a vegetarian--went on and on about what a delicious find it was. Apparently it is not easy to find in this country but I thought I remembered there was a place in San Francisco that made it.
I love it, love it, love it! It's chewy and delicious, broken up and included in recipes. Like very rich, very firm tofu.
One year I got too creative for my own good and made a tofu "turkey" with soaked-yuba "skin"-- it got chewy-crisp and was very tasty and entertaining, but kind of creeped me out. I mean, I'm making dinner, not props for a horror movie, sheesh! :)
is yuba sold online at all?
I use this all the time. You can find this in Asian market in the refrigerator section. I only wet it (per sheet) until it is soft. Depends on how big is the sheet, I usually bought those huge round one. I cut those in to 4, and use it to wrap any prepared veggie (cabbage, mushroom...) wrap it like a burrito. Use a little oil to cook either side is golden brown.
