yikes - Yellow Tofu!

I tried to freeze some tofu overnight in a tuperware and the next day it was yellow-ish. I tried again another time but wrapped the block in plastic wrap as well - but the outcome was the same.
How do you suggest freezing tofu? Is this normal? :o
My tofu always turns a bit yellow when it's frozen, but it should go back to normal colour when thawed :D
Don't worry, it's quite normal and doesn't affect the quality of the tofu. You will notice a lot of the water separates out, as well. This is why a lot of people freeze it, to get a "meatier" texture without all the excess water.
I froze tofu for the first time the other day to make General Tae's Tofu. It turned yellow when frozen then thawed normal color. It turned out wonderfully. No funky reactions. I highly recommend it. Yum!!! :)
