Wine Vinegar?

I know that wine is often not vegan because of the fining agents that winemakers use. I was wondering if this is true of wine vinegars as well. Also, does anyone know about dijon mustard? I think that wine is usually in that as well.
Dijon mustard usually contains vinegar and salt as well as mustard seed.
I have a vegan friend who purchases only vegan vinegars and things made with vegan vinegars. I hadn't even thought about that before, but I don't even know how you verify if the vinegar is vegan. oooh alliteration <3. but there is a brand here called byodo that she says is vegan so I bought that brand of mustard.
