where can I find vital wheat gluten in canada?

Hi everyone
I'm in Ontario & have had a hard time finding vital wheat gluten to make seitan. I've checked bulk stores, health food stores and regular grocery stores. The health food places around here are trying to stay as gluten-free as possible, so I'm not really sure where else to look. any suggestions?
I live in Toronto and I just went through this same thing... turns out it is like baypuppy says, it's called gluten flour up here. Once you're looking for the right name, it's not too hard to find, at least in Toronto, especially in health food stores... good luck!
I got gluten flour (the same thing as vital wheat gluten) at the Bulk Barn - so it is available in Ontario! (That's where I live too, by the way.)
oh man. ok, I must have read a recipe where someone distinctly said "it HAS to be VITAL wheat gluten!" so no wonder, I didn't know it would be called anything else - just assumed any other kind was for bread making or whatever. I will look again next time I go to the bulk barn. thanks guys!

Bulk Barn IS heaven. I buy all my spices there because it's so ridiculously cheap.

i buy all my every thing there ;)b its the only place i can find tvp chunks and dried beans that are not white or kindey
found it today and made a whole bunch of baked seitan. man, that dough stuff is fun to play with!
Don't forget you can also make seitan from whole wheat flour. It is a lot more time intensive, but it can be a lot cheaper to buy bulk wheat and grind it yourself. As long as you sift the flour after you grind it to make sure there are no hard kernal pieces in there, it's not difficult at all to make, just time-consuming.
OK. I'm at this moment using gluten flour that I bought at The Bulk Barn in my bread machine as a substitute for vital wheat gluten. I used it with ordinary yeast (about 20% more than normal and am baking it on the rapid whole wheat cycle. Will let you all know in a couple of hours if this is an effective substitute. Wish me luck.
Yes. It works. The bread is delicious, if a little bit glutenous. Still, it's good to know that in Canada, gluten flour can be used in situations where a recipe calls for vital wheat gluten
