I bought a bunch of arugula on sale. I'm tired of salads. Do you have any suggestions on how else I can use it?

Since it has a faintly "dandelion" flavour, you could sauté a little onion (and garlic if you like) with some tofu "bacon" and then add and fry/wilt the arugula. Add a little vinegar.
Or use it to make a "greens soup". If you can, mix with beet or turnip greens. If not, proceed as above and add a cup or two of broth and soy or other milk, cook until tender and blitz until smooth. Season to taste. Of course you will probably want to leave the "bacon" out of the soup.

Put it on sandwiches, make a pesto with it (yum!), saute it with garlic and stuff for pasta...I wonder if you could do an arugula and artichoke dip? Make bruschetta.

I second the pesto idea. I love arugula pesto, but it's kind of bitter if you're not used to it, so maybe half basil half arugula the first time? It's so yummy. I make it with walnuts (way cheaper than pine nuts).

Arugula pesto is delish! I also enjoy arugula tossed in pasta w/ olive oil, olives, tomatoes, garlic, etc. It's also great in sandwiches for a flavorful kick.
