What can I do with Amaranth? Need recipes

I've just discovered Amaranth. I'd love some recipes if you have ones to share. (I'm not skilled at tossing some of this, some of that & coming up with delicious results...thus the need for recipes)
I'm assuming this can be cooked like rice? I want to add something else, so that it's "different"-otherwise my family will think it's just same old, same old rice. Something with a tinge of sweetness is always good for my teenage sons (like agave nectar, cinnamon for spice, apples--but this is already what I do for rice...)
Can you add peanut butter to it for a good results?
Any and all amaranth experiences, recipes, etc. are welcome. :) :)

I just made my favorite amaranth recipe for breakfast this morning! It's Dreena Burton's millet-amaranth porridge from Vive Le Vegan:

It's awesome! I also will just eat amaranth as a side dish - just cook and then top with some EB, salt, and pepper - it's yum!

Amarath leaves need to be cooked first and then mixed with lentils (cooked) and then add cumin seeds powder or little curry powder and salt. You may add a dash of olive oil or oil of your choice in cooking Amarath.
