Wanted: cupcake & muffin recipes with thick batters

Hi, can anyone recommend basic vanilla cupcake and/or muffin recipes that produce a thick batter?
The recipes I use (cupcakes from Chloe Coscarelli, muffins from 150 Best Vegan Muffin Recipes) taste great, but they produce runny batters, so if I add choc chips to them, they all sink straight to the bottom!

Coffee Chip Muffins from Vegan Brunch. I know I've included the chocolate chips in them and they were fine. Maybe try mini chips?

would the base for blueberry muffins work for you? If so http://vegweb.com/index.php?topic=11738.0 The batter comes out really stiff for me and drives me nuts but the results are so good I keep going back to it on a regular basis.
I did look at that recipe before posting but as I had no idea whether its batter would be thick or thin I thought I'd ask here.
I'm sorted for muffins, now I just need to find a thicker batter for cupcakes! I read a suggestion yesterday of adding cornflour until you reach the desired consistency, but I'm not sure to what degree this would affect the taste and texture.
Does it have to be vanilla? I think a banana or pumpkin cupcake would be thicker and hold on to chocolate chips well.
If it must be vanilla, what if you sprinkled the chocolate chips on top just before putting the cupcakes into the oven instead of mixing them into the batter? Maybe they'd sink just enough?
Yes, I'd wondered whether that might work, either that or spooning most of the batter in, sprinkling the chips, then topping with a final spoonful of batter.
I was after a plain base that would be easy to change. In the UK we don't have pumpkin puree and banana is my most hated taste, so those unfortunately are not options I can consider!
