Vegetarian Recipes for Slow Cooker (Crock Pot)

Hi!
Does anyone have vegetarian or egan recipes or ideas for the slow cooker. It's always nice to find a ready home made meal when I come back from school... :)

hi medee, it would seem that slow cookers do not feature highly in vegweb readers kitchens.
surely someone out there has a recipe to suggest...........
There is a book that I checked out from my library called "Fresh From the Vegetarian Slow Cooker" that I remember was quite good (just about the only non-vegan ingredients were optional cheese sprinkles on finished dishes). Maybe your local library has a copy?

any kind of soup, or stew recipe can easily be fixed in a slow cooker. i am a teacher and single parent and i absolutely hate to come home every single day to cook meals from scratch. so about once a week in the summer and maybe twice a week in the winter, i will just follow any old recipe for stew or soup, cut up a lot of veggies the night before and pluck everything in the pot before i leave for work, turn the pot on low and let it cook for 8 hours. when i come home...dinner is served. i even cook beans this way and they come out so tender. put a half a bag of mixed beans in the pot, your own seasoning, and some tofurkey- cook for 8 hours on low and you have dinner for at least 4 days. believe me, any stew recipe will work for you.

I just got a slow cooker about a month ago for a wedding gift and had the same problem. I found a list of 10 recipes at this better home and gardens sight. Some may need to be veganized and I'm not sure if some call for chicken broth, but you probably already know, just use veggie broth. They say vegetarian, but I havn't used any of them yet, just have the page bookmarked.

Hi I've tried this one several times with good success (it's even better as left overs)
2 tbs oil
2 large onions
1 stalk lemon grass
2 bay leaves
1 small red chilli, deseeded and chopped finely
8 cloves of garlic, crushed
1 1/2 tbs fresh ginger, grated
3 tsp ground tumeric
1 tsp ground cinnamon
1/2 tsp ground cardamom
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground ginger
1/2 tsp sea salt
1/2 tsp cracked black pepper
2 cups Massel chicken stock (vegetarian chicken stock)
1/4 pumpkin, peeled and diced into 2cm cubes (approx)
600g asian firm tofu, cubed (firm tofu from the Asian grocer is very firm and holds it's shape well) - I've also used 2 cans of chickpeas instead of tofu.
Heat oil in a non-stick pan. Add onion and cook over medium heat until soft. Stir in the chilli, garlic, ginger, turmeric, cardamom, cinnamon, cumin, coriander, ground ginger, salt and pepper. Cook for 1 minute.
Add the tofu and pumpkin and stir to coat.
Place mix in the slow cooker (stockpot) with the chicken stock.
Bash the lemon grass stalk a few times with the end of a rolling pin to break the fibres and then tie into a loose knot (releases the flavour without chopping into small pieces and makes it easy to remove after cooking - learnt this trick from a Thai friend) and pop it in the crock pot. Add bay leaves.
Cover with lid and cook on Low 6-8 hours, or on High for 4.
Serve with rice.

just wondered, does 'basilstail' refer to basil brush?

I have that little book for vegan slow cooker recipes and I love it.
I have Fresh from the Vegetarian Slow Cooker. I can't really say I love it. The recipes I tried were pretty bland so I kind of gave up on the book altogether. I'd say follow the recommendations of these helpful posters. That stew recipe sounds awesome.
