Vegan/Vegetarian Culinary School?

I'm thinking of becoming a pastry chef or just going to culinary school, and I was wondering in any of you know of a school that has vegan/vegetarian programs/classes etc.
Also, if anyone went to culinary school, what school did you go to? Did you like it? any information would be great.
I have a friend who attended the Institute for Integrative Nutrition in New York City. I don't know much about it, but she is vegan and teaches classes on vegan cooking.
There's one in Colorado that specifically has a vegan pastry class. Here it is!

I visited The School of Natural Cookery in Boulder about a year ago. They offer a vegan course. There is one part of the course where they teach meat stuff, but you can elect to do vegan courses instead. At the time the school was run out of the owners house, but she said they were going to be moving to a new commercial location. She showed me the plans for the kitchen & class room & it looked really nice. I see they have either not moved or have not updated their website.
They were having a class the day I was there. It seemed a little cramped, but the students were having a good time & it smelled wonderful! I never followed up cuz it is very expensive & I'm worried that cooking for a living will take away my joy of cooking. But I still think of it on occasion & think maybe I should check it out again. Let me know what you find out, especially if they have moved to a new location.
Did you ever see Super Size Me with Morgan Spurlock? His girlfriend, Alex is vegan & I just love her in the movie! Here is her website, specifically, the services page, where it looks like she may also offer instruction. It may give you some ideas what to do with your training when you complete it.

There is a Natural Gourmet Cooking School in Manhattan. Some of their instructors are well-known vegetarian cookbook/magazine authors, like Myra Kornfeld and Peter Brearly. I took a seitan-making class there with Myra Kornfeld.
I was thinkin of doing the same thing weelittlebuddy. I've checked out the Boulder school of natural cookery online, but was wondering if anybody knew about what type of degree, if any, that these schools grant. It might be hard to find a good job without one. :-\
