Vegan cream of chicken soup? Is it possible?

I am trying to veganize on of my favorite recipes from my omni days.  I think I've got it except for the can of cream of chicken soup it calls for. (Campbell's brand it what I used before)  Has anyone found a substitue for this?

What's the recipe for?  The other day I made a potato soup that turned out rather chicken-y tasting.  I added some poultry seasoning and nutritional yeast powder to my regular basic potato soup.  You might try making a thick bechamel with olive oil (instead of margarine), then when you add your liquid, add a little poultry seasoning and some nutritional yeast.  If you don't go to heavy on the yeast, it'll turn out chickeny, rather than cheesy.

The recipe is called Chicken Divan.  The original recipe has white rice, broccoli, sherry, salt, pepper, chicken  and the purpose of the soup was to make it creamy.  It had a small amount (maybe just a tbsp?) of parmasean cheese but overall, the recipe was not cheesy tasting.  It actually has a very mild taste.

That sounds yummy.  I'd definitely try a thick bechamel, seasoned w/ maybe 1/8 tsp of poultry seasoning and 1 Tbs of nutritional yeast powder.  If you only have flakes, just blend some up until it gets powdered.

Thanks, Tkitty.  Could to explain more what bechamel is? I have never heard of it before.

Melt about 2 Tbs of margarine, stir in 2 Tbs flour.  Get that well incorporated, then stir in your liquid.  Usually milk is used for a bechamel, but when I want to watch calories, I'll use veggie broth instead.  Amount of liquid added depends on what viscosity you're needing, but you can always add more if its too thick.  So add a little at a time.  Bechamel is fully thickened when it comes to a boil.  Sorry I can't tell you exactly how much liquid to add, I always just do what looks right.  :D

I make something like the Bechamel (aka white sauce) and use it for a "chicken" gravy. For flavouring, I use the Kosher "chicken" bouillon from the Jewish aisle of the grocery -Make sure you get the Pareve one (it has a little P or the word Pareve on the front next to the K for Kosher, or next to the U with the circle around it, also for Kosher). These are vegan, and are very convincing. (they sometimes have MSG, so if you are concerned about that, be warned). I add a little pinch of sage for my gravy, but for the soup you may not need it. A little minced celery and some minced "chicken" seitan should complete the picture.
