Ume/Umeboshi Plum Vinegar

It's been sitting in my cabinet for about 2 years.  Not sure what compelled me to buy it.  What can I do with it?  ???

I used it in a red cabbage recipe I had in the "Voluptuous Vegan".  I'm such a literal cook that I had to buy it because the recipe called for it.  Be careful because 1 tablespoon has a riproaring 1000 plus milligrams of sodium.  I would think you could add it to veggies for a little salt and flavor.
