A Tropical Dinner

To get in the spirit for Sunday night's series finale of LOST, I want to make a tropical-themed dinner. Flavors like pineapple, coconut, mango, etc. But I don't quite know what other flavors to incorporate or really what food to make at all! What are you favorite tropical foods to make for dinner?
There is a recipe on here that combines pineapple and black beans.
Grilled kabobs with pineapple, tofu, and veggies with coconut rice.
Sweet & Sour Tofu or Seitan (Pineapple)
Curry (Coconut)
Sliced mango with pico de gallo seasoning
Coconut Black Beans & Rice - Saute onion, add rice, water, 1 can coconut milk, black beans and whole hot peppers. Simmer till rice is done. You can put in super hot peppers whole or Jalepenos quartered with seeds removed.
Make a lovely grilled fruit salad with pineapple, mango and peaches. Toss it with a light agave vinegarette.
Grill up some veggies that you love; asperagus, broccoli rabe, zucchini, eggplant, mushrooms. Serve it all on a banana leaf!
Pinapple + green peppers + onions + oil+ brown sugar.
Roast in oven until oh so yummy and serve over rice.
Sprinkle with coconut.
I think the actual recipe should be on the vegetarian times site because I probably missed something. It's called "oven roasted pineapple and green peppers" I believe.
for drinks, Lava flows: pina colada w/ a strawberry swirl, Mai Tai's = guava juice, w/ light rum and a dark rum float. My specialty: the guava-rita= guava juice, tequila, triple sec, fresh lime juice with a sugar rim on the glass. (blended is the way to go.)
I should post the recipes on here, I forget about them now that I never drink anymore. It would be an excuse to go get a bottle of tequila.............
For the curious, here's what I ended up making:
-Grilled pineapple
-Black bean burger patties topped with Mango/Avocado Salsa
