Stove-top only

In about a week I'm moving into an extended stay hotel, and the only means I'll have of cooking will be a 2 burner stove-top burner, a refrigerator(not sure about a freezer), and a microwave.  I'm vegan, and my fiance, when I'm around, is vegan too. So I'll be cooking for for 2, he eats a lot though...so better make that cooking for 3...

About the only things I've been able to think of are pasta creations.
I guess I'm limited to not having bread, as I've never had much luck finding any at stores, and won't be able to make my own, although I could still make tortillas for wraps.
Unfortunately I've never really been a fan of any kind of bean.
I won't have access to many specialty products like soy cheese, most faux meats and things like that that.

So any recipe suggestions would be much appreciated!!

Get a toaster oven, you can bake in that!

I have lived in extended stay hotels, all the ones I have ever been in have a full fridge with freezer.  I thought they had an oven too but I can't remember...no...maybe not.  I remember making asparagus in the microwave and I never do that, so it must  not have had an oven. 

I make banana breads, biscuits, cookies, all kinds of stuff in toater ovens.  You just can't make as much.

You are lucky, I love extended stay hotels, super comfortable and really nice and you get room service every day.  I wish I could live in one!

I definitely recommend stir frys.  You can get a spread of veggies and combine them in a different way each night.  Also very good with tofu instead of the fancy fake meats.  And at a lot of grocery stores you can buy vegan stir fry sauces, or you can make your own (water + soy sauce + some sort of acid + some sort of heat + flour/cornstarch as a thickener).

Do you have a toaster oven?  You can't do quite as much, but it helps.  You can even make mini loaves of bread.  I got mine for $5 in a yardsale just about brand new.  I make more on the stove that in the oven though.

Don't forget rice! You could make your rice, then put it in another bowl. You could saute some cubed tofu (you can even buy it pre-cubed! I'm looking out for ya), add some frozen vegetables (already chopped!), cook until thawed, add some soy sauce or bottled sauce, then throw the rice in. Boom. Dinner.

Buy yourself a rice cooker, you can just plug it in..they are pretty cheap
