Squeaky Seitan Fail

I made seitan from Bob's Red Mill Vital Wheat Gluten and decided to go the brainless way and just followed the directions on the bag. It turned out somewhat edible but disturbingly...squeaky. Kind of rubbery. It said to boil it for an hour but I kind of simmered it for an hour. Do we think I overcooked it? I've seen recipes for baked seitan and steamed seitan too. I can go out and find the actual recipes, but I'm just wondering if anyone has had a similarly squeaky seitan failure and has any top-secret tips to prevent the horror of the squeak.
You did the right thing by not boiling it--everything I've ever seen says to just simmer it and never let it come to a boil. The seitan recipe in Vegan with a Vengeance and Veganomicon is great and has detailed instructions.
I've had seitan get squeaky after I've frozen and thawed it. I don't really know why, though, and it doesn't really bother me.

Try making it as directed on the box, dividing the mixture into gluten steaks, and cooking the steaks in a crockpot on low for 4 to 6 hours...

once the seitan steaks are done... i let them cool completely in the crockpot broth... when i'm ready to prepare the seitan, i thinly slice strips or cut it into cubes and fry it in oil until lightly browned, then season it with whatever sauce tickles my fancy
Thanks guys! I'm glad I wasn't the only one with squeaky effects, and I LOVE the crockpot idea. I'll definitely try that next time. :)
