I've got some spinch, and some lima beans...and I was wondering if they would make a good soup. Anybody got any recipes/ideas?

Lima bean stew Lima bean stew If I don't get some I don't know what I'll do ;D
Put 1 cup brown rice and several cups of water on to boil. Simmer for about 20 minutes and add 2 diced potatoes. Maybe a diced up yam or sweet potato. A couple of diced carrots. Simmer for another 20 minutes and add the (canned/cooked) Lima beans. A generous dash of tamari. A tsp of dried dill.
Serve with (and here's the kicker) chopped dill pickles (maybe add a splash of the pickle juice) and if you are of L/O persuasion a grating of cheddar cheese.

Ok, so that recipe didn't have any spinach in it, but I ate all the spinach anyway, so none left for soup. Spinach is the best! And so are lima beans...
I do love dill pickles, but I'm a little wary of them here. Are you saying you chop them up and put them in the stew? Or serve them on the side?
