sloppy joes/steves?

So, I have the weirdest jones for something of this sort today. Not having made them in my adult life, though, I thought I'd appeal to this lovely community for suggestions. What's your favorite recipe? Do you prefer tofu or tvp? I must admit to being resistant to using a TON of ketchup.
It must be in the air. I have a bag of Dixie Diner's new "Carver Cuts" with BBQ flavor and I think I might try it.
The Sloppy Lens (Sloppy Lentils) have received a few good recipes, I think. I haven't tried any of them, unfortunately. I don't like using ketchup en mass either; I think most recipes use tomato paste; if they use ketchup, you could probably replace it will tomato paste, water, and a bit of molasses. Tell us how it goes!
