What is the role of vinegar in rice and how much do you usually use?
Also, what is the difference between rice vinegar and regular white vinegar?

I'm confused do you mean for making sushi rice or something?

Rice vinegar is sweeter IMO especially the sweetened kind obviously LOL

I had no idea there was a sweetened kind! Not just for sushi rice, I've heard of people just putting it in their regular rice (like plain rice).

well ya you could put regular vinegar in rice and just add some sugar to make it sweetened... white sugar BTW
like if i have unsweetened rice vinegar i add sugar (when making sushi type sweet rice)

You mix the vinegar with sugar and add it to the rice AFTER cooking to make sushi rice. It's the sugar that makes it sweet.

You can add a little vinegar, like a teaspoon or so, to the cooking water if for any reason you want really white white rice. Also the acid keeps the rice from clumping up. Lemon juice will do the same thing.
