Raw dessert that doesn't use coconut oil?
Okay, so I just bought a small plastic container of Organic Medjool dates, and I knew I had to make a raw dessert with them. Problem is, I can't find a recipe that doesn't involve coconut oil/butter in one form or another. All I really have is:
Cocoa Powder
Medjool Dates (Not pitted)
Slivered Almonds (REALLY thinly sliced and no skins)
Roasted Cashews (I'm not really trying to go raw, so these can substitute for raw cashews if needed)
Salted Crunchy Almond Butter
Super Small Container of Cashew Butter
Agave Nectar
Carob Chips
Vanilla Extract
Almond Extract
A Honeycrisp Apple
1 Cup of Frozen Raspberries
3 Frozen Bananas (I've already done the Banana Ice Cream)
Frozen Blueberries, Strawberries, and Peaches
Navel Oranges
Half a Lemon
So, what can I do with all of this? I was thinking a raw brownie would be nice (Using the almonds, dates, and cocoa powder) but then I can't find any good icing recipes not involving coconut butter! Please help, and try to include dates in the recipe.
By the way, I don't have a dehydrator either, just a food processor and blender.
maybe a banana cream pie? pulse dates and some kind of nuts for the crust and press that into a pie pan, mix bananas and vanilla and agave for the filling?

A really simple but yummy dessert is just to stuff dates with either almond butter or almonds themselves.
When I make raw brownies, I never frost them...they really don't need frosting, honestly! But my recipe is walnuts, dates, cocoa powder, vanilla, and then pulse in some carob chips. It might work with almonds or cashews, I'm not sure...
This probably doesn't help, but I've made tons of raw dessert recipes and never once used coconut butter/oil! So it can be done!!
You don't need frosting for the raw brownies. I bought some at a vegan bake sale, raw brownie balls, and they were delicious. Think they were just dates, nuts and cocoa powder.
as a stand in for icing, you could do either almond/cashew butter, agave, and cinnamon (if you have it). I know one place that makes vegan (but not raw) brownies with pb/maple/cinnamon frosting (those are the only ingredients), and it's magical.
