Quick question for the sprouting gurus

Not the sprouting gurus... the sprouting gurus. Or is it the other way around? ::)
I have some chick peas going and stupidly soaked them for two days, I only now read you soak for like 8 hours and then leave out.
I did change the water, but they have that funky smell going. If I leave them out now will they turn out alright or do I have to chuck em?
I don't have an answer for you (sorries), but I myself am currently on the lookout for sprouting tips as a beginne= thought I'd bump the pager. One question I've got, too: can you use any old seeds for sprouting, like bulk amaranth (and yes I know some are toxic, like kidney beans)? Can you use seeds from the wild (like wild amaranth, which I collect)?
