I need some good potluck ideas for an office of mainly meat eaters, there is one other vegetarian and me.

depends on what kind of thing you are looking for but i just recently made a bean salad that had black beans, kidney beans, avocado, tomato, quinoua, cilantro, salt, and pepper and it was really delicious. i think it would be a good potluck food.

Sorry that this is a vague suggestion, but you should make something that you definitely know YOU like, probably a main dish, because many of the meat-eaters will be bringing stuff you can't eat anyway. So I wouldn't bring something too insubstantial. If you bring just dessert or an appetizer, you might be hungry!
I'm a big fan of pasta dishes at potlucks, although I don't have any specific recipes. They're usually pretty easy to dish out, feed a lot of people and are yummy, as well as not too "veg*n" - I wouldn't use any meat substitute dishes. So maybe a pesto or pasta primavera? I'd recommend penne pasta noodles over long noodles because they're neater to serve and eat, especially if not everyone sits down during dinner.
I made a very similiar bean salad to the one that Hespedal recommended, and I simply HAVE to second that suggestion. That would be a great thing to bring to a potluck.

Im looking for anything that's cold, but good and easy to transport, could be salty or a dessert/sweet.

i made a potato salad (the recipe on the side of the nayonaise jar) for my going away party, most people who came were meat eaters, i think the only vegans were me and my boyfriend. most people didnt know that everything was vegan, some came up to me and asked, they loved it. some other things i had were homemade ranch dressing with veggies and chips and sour cream onion dip. all of those things are cold and easy to transport. to make sure you have a fantastic dinner, you could make an appetizer, salad and dessert.
