Pot Luck

Help!  My son's school is having a pot luck tomorrow night.  We're to bring an entree.  I figure I'd best bring something I can eat, since probably nothing else will be vegan.  So...

What can I bring, that will feed at least twelve, is relatively easy to make, and that omnis might enjoy too?  I don't want to alienate anyone.

Any advice welcome!

Vegan chili using either fake beef crumbles or TVP!

The chili idea is great, but I like this recipe:

The bulgur gives a good texture for those expecting ground beef in it - I served this at the office and everybody has asked me to bring it again.

Oh that's cool! I've never seen this recipe before, now I want to try it!

Honestly, you can't go wrong with chili!

Butternut Tofu Stuffed Shells

Cheesy Lasagna I haven't seen "Herbed" Tofu as of yet, but I am sure you could just season it with some herbs and it would be fine

Vegan Shepherd's Pie. It stands well and people like it.
Or the Lasagne.

To make "herbed tofu" I usually just stir the herbs and spices into the tofu and let it stand for at least 30 min to absorb the flavours.

Vegan chili for sure. It's bound to be a hit. And I also second the butternut squash lasagne. If you have the How It All Vegan! Cookbook, there is a great chili recipe in there for chili and spinach lasagne. A nice crockpot of hardy soup or stew would be nice. Or a simple casserole! Any sort that I have ever made have always been a hit with omnis. And mac and "cheese" totally counts in the casserole catagory!! Kids would love that!

Crockpot chili, as suggested, is good. Just no "fake meats" in dishes. Not everyone likes them. Serve chili with a fresh baked cornbread and everyone will love you.

Thank you all so much!  I did make the Ultimate chili that had been linked.  Doubled the recipe, used black and pinto beans, half n half TVP and bulghur.  Was awesome!  Zero left; everyone ate it up.  Don't even think most people knew it was vegan.

I'll be making another pot tomorrow for ME to freeze.  Thanks again for all the great ideas.

That's awesome! Everytime I make chili it all gets eaten up and then I have about a million people asking for my recipe.
