Please Help=Need Gluten Free-Vegan Freezer Meal Ideas for after I have my baby

Hi Everyone,
I wasn't vegan for very long before I got pregant and I have really strugged with being able to stick to a vegan diet through out my pregnancy, really due to morning sickness and major food aversion issues to pretty much all of my vegan cooking staples. Now I have 11.5 weeks to go until my due date and I really want to make sure I get off on the right foot being vegan after I have my baby. I know my husband and I will be way too tired, busy, etc with a new baby to really focus on cooking so I really want to make a bunch of meals now and freeze them to help us through those first several weeks. To make it a bit more complicated I also have to be gluten free (gluten intolerant, not celiac). If anyone as any meal ideas or recipes for gluten free vegan foods that freeze well I really would appreciate your recommendations.

Soups!  I love to make big batches of bean or potato or veggie soups and freeze them.  You can also freeze batches of beans and rice so that you have some pre-made for adding stuff to it. Keeping those and some frozen veggies on hand will mean you can whip up rice and beans, taco salads (just put toppings on corn tortillas or tortilla chips), stir frys.

Also, if you find a gluten free pizza crust recipe you like, wouldn't hurt to make up a few of those to toss in the freezer. I know I ALWAYS want pizza... but corn tortillas work in a pinch. Just bake them a bit and top them, then bake some more.

I agree with fufu -
I make a cajun red beans and rice that is a freezer staple for me. Also homemade veggie soups with whatever is on hand. My favorite is a kale, quinoa, potato and pea soup.

Veggie lasagna with brown rice or corn noodles and tofu ricotta.

I recently found a great brand of gluten free pizza crusts I like - kinnickinnick. It's a bit expensive, but quite tasty and filling. Lightlife has some frozen veggies meals that are pretty good for a quick meal.

Frozen fruit for smoothies, and lots of frozen veggies.  They're quick and easy if you don't have a lot of time to eat healthy!
