Made Lentil Tacos!
Yeah not very exciting for the experianced veg or vegan but something i hadnt tried :) . Made them same way my family has been making tacos for years just replacing the beef with cooked and mashed french lentils and adding a little oil to replace the fat you normally get from meat. Not sure if its 100% vegan i still have to look up the spices just in case anything sneaky is in there.
I used -
1 cup french lentils cooked and mashed
1 small red potato finely grated
diced red onion to taste (i forgot this time but will add them later)
Seasonings to taste -
Ground Cumin
Lawrys Season Salt
Lawrys Garlic Salt
Mortons Nature Seasonings
Combine cooked lentils with raw potato, onion and little oil cook till potato is done adding seasoning as you go.
Its a bit heavy on salt (nutritionally not taste) but it really did taste like what i remember beef was like, the texture was just different (firmer and not chewy). We usually have tacos with homemade guacamole and salso with romaine. Im really happy with the way this turned out and i made extra to freeze. If anyone else fels like makingthis let meknow what you think.
P.S. Since some people have never made tacos with a potato it started as a cheap way to stretch meat but became useful as it binds everything together so it doesnt fall out of the shell :).

Made these again with my frozen mix last night and they were just as good if not better! The texture improved and the flavor held very well. Will deffinatly be making these again :)
One of the few veg meals my Mom would make when I was growing up before I went veg is lentil burritos. She adds zucchini & squash to the lentils after they are cooked. Her recipe also uses cumin and garlic. It's one of my very fave recipes! I love them with a slice of avocado on top. Yum
