Low acid recipes?

My DH was recently diagnosed with a precancerous condition in his esophagus caused by GERD.  We need to do a better job of eating low acid, but it is *killing me*.  No tomatoes, onions, citrus, fried foods, peppers, vinegar or fatty foods.  Minimal garlic.  Add that to gluten free vegan and I can't figure out what to cook anymore.  I feel like all we eat are veggie burgers, tofu sandwiches and stir fries.  I miss interesting food.  DH has been eating meat again (he's a part time omnivore, the rest of the family is ovo) and I've resorted to cooking some fish because I'm having so much trouble meal planning. 

Anybody have some good low acid recipes for me so we can get back to eating mostly vegan? 

I have the same problem. It take's time getting used to. I eat rice, all vegetables, and desserts. Also you can make some really cool saLads and pasta with butter.

cooked vegetables
mashed potato
smoothies

you can always make other food for your self
