Anyone have a good recipe for a vegetarian version of Italian Wedding soup? I've searched this site and the web and only found one recipe. I thought someone here might know where to find more so I could compare and choose the one I like best. Thanks.
Wendy, what's in this soup? I've heard of it but have never tried it.
Here's a vegan version: http://www.poco-cocoa.com/?postid=213
Ha, the commment at the very bottom says she's glad to have a way to use her left over pesto. She has left over pesto? :o
Yes, it's a soup with little meatballs in it. I don't even remember what it tastes like because it's been years since I had it. My sister really likes this and is a meat eater but will eat veggie things if I make them so I thought I'd try to find a recipe for this. The recipe I found calls for fake meatballs and vegetarian "chicken" stock so I'll try that one. Thanks for the suggestions.
The version I vaguely remember was chicken broth with endive and some kind of cheese (parmesan and romano?). The woman who made it would stir the cheese in the hot soup and it would get kind of stringy and lacey in the broth. I don't have an exact recipe (obviously), but would think a traditional recipe could be modified with vegan versions of things.
This one didn't have meatballs, though...
