Hot Oil Hurts My Eyes....Why?

Does anyone know why hot oil (canola) can sometimes irritate your eyes?  I've become addicted to batter-dipped, deep-fried zucchini, but every time I plug in my fry baby and heat the oil, my eyes become irritated and start to water.  It's worse than chopping onions!

Maybe b/c canola oil KILLS?!!!!! No, I dunno! I don't think I've had this issue occur.. ???

It may quite possibly have some kind of chemical preservative added. That's one reason why I never use canola oil. The other being that we have olive oil here that is tastier and has good benefits, and even sunflower oil is cheaper and tastes better. I don't like canola because it is plain fat.

The only thing I use the canola for is the deep fryer because it is supposedly ok to use at higher temperatures than many other oils.  I'd love to be able to put olive oil in it, but I read that it shouldn't be used at high temperatures.

Does anyone else ever have a problem with hot oil and their eyes or am I just a weirdo?  Perhaps there is something in the "fumes" that I'm just hyper-sensitive to. :-\

Are you re-using the oil over and over.  If that is the case the oil has broken down and probably not good to use.

Actually, I do use it 3 or 4 times before I give it to my friend for his car (runs on veggie oil).  One use just seems like such a waste for that much oil, but if it is breaking down.....I wonder if they make a smaller deep fryer? :-\

Is the frier made of teflon?

I looked it up and it says "non-stick finish" so maybe.  :-\  The primary material is cast aluminum.

Indeed, Storm, that may be it. The problem may be the pan, not the oil.
Can you do a little experiment, heating some of a different oil in it, just to see if you have the same effect? That's what I would do.
