What should I serve with acorn squash??
It is my mother's recipe veganized and for the life of me I cannot remember what we used to eat with it(probably nothing :>_.
It's the "butter" and brown sugar baked squash(comfort food for anyone else?) variety. I threw a couple of apple slices and a little maple syrup.
To be honest it sounds more like a dessert to me.
I thought maybe some green beans or potatoes or something, but I have no clue.
Any suggestions??

With something sweet, I'd say to make something with a little salt. 8-)
I would take some corn on the cob. Preheat the oven to 350 degrees. Boil the corn for a few minutes. In a saucepan, heat up some earth balance, garlic, paprika, a dash of salt, some pepper, and some red pepper flakes until the earth balance is melted. Pour the butter sauce into a bowl, and get another bowl with some breadcrumbs. Roll the corn in the butter, then coat it with the breadcrumbs. Roast for about 15-20 minutes.

Oh I don't know. Maybe I should have been thinking about thins when I was at the grocery. Argh.

How are you preparing this? Is it going to be sliced and roasted or is it going to be pureed? My lady and I made something like this once with some sweet potato casserole...not a good idea, the two foods were too close to the same thing. I wouldn't recommend potatoes with this. I think you're going to want something more crisp. You mentioned green beans...maybe you could saute some green beans with a little soy sauce and garlic?
Hmmm, I always have trouble finding sides for starch/carb-heavy min dishes like these. What I *tend* to do is:
-Some vegetable dish (I love, love, love sauteed green beans, but sometimes I'll do an oven-roasted onion/mushroom/garlic mix, but do with WHOLE cloves of garlic; they lose their bite after broiling and you just get delicious bites of whole, roasted garlic)
and/or:
-Some fried tofu with some sauce on it--for some protein
